Pea soup recipe from M.V. Helliar

At NorthLink Ferries, we’re lucky to have several very talented chefs working in our galleys. These magicians manage to create tasty food for large numbers of people at a time, and they do it all in a moving ship!

It’s a delicious warm hug of a soup – easy to make and perfect to serve after returning home from a bright but cold autumnal walk, or after struggling with the raging wind on a winter’s day.

We’ve received several recipes from chefs on board that we’re keen to share. This fantastic recipe for Pea Soup came from Viacheslav Yeremiia, Chief Cook on the freight ship, M.V. Helliar.

The soup serves two – just double up the ingredients to make more!

Ingredients

  • 1 tbsp olive oil
  • 1 garlic clove, chopped
  • ½ onion, chopped
  • 200g frozen peas
  • 300ml vegetable stock
  • 50ml double cream
  • Salt and freshly ground pepper

Method

  1. Heat the oil in a saucepan over a medium heat.
  2. Add the onion and garlic and fry for 3 to 4 minutes, until softened.

  1. Add the vegetable stock and then the frozen peas and bring to the boil.
  2. Reduce the heat and simmer for ten minutes. Be careful to not lose all the liquid at this stage!

  1. Add the cream and use a hand blender to liquidise the soup.
  2. Season to taste (we didn’t think much, if any, salt or pepper was required) and serve in a warm bowl with bread (to mop up any remaining soup.)
  3. Enjoy the look of pleasure on the faces of all those you serve this delicious soup to!
