Red onion chutney

This is a recipe for delicious chutney that I made up myself, using the best bits of a few different recipes. The amount of ingredients listed below makes approximately two jars.

I think it goes really well with cheese and oatcakes. I’m also particularly fond of using the chutney with ham sandwiches!

It takes 1 hour to make and needs a bit of time to cool as well.

Ingredients:

  • 8 red onions (about 1kg)
  • 100g caster sugar
  • 50g dark brown sugar
  • 100ml red wine vinegar
  • 100ml malt vinegar
  • 100ml red wine or port
  • 1 finely chopped clove garlic or 1 tbsp garlic powder

Method:

  1. Finely slice the onions and place them in a pan with the sugar. Cover and cook for 10 minutes. 
  2. Add the liquid and the garlic, then simmer until the liquid has reduced and the mixture is sticky. (This should take about 40 minutes).
  3. Leave to cool. Once cooled, transfer into sterilised jars.
