Red onion chutney
This is a recipe for delicious chutney that I made up myself, using the best bits of a few different recipes. The amount of ingredients listed below makes approximately two jars.
I think it goes really well with cheese and oatcakes. I’m also particularly fond of using the chutney with ham sandwiches!

It takes 1 hour to make and needs a bit of time to cool as well.
Ingredients:
- 8 red onions (about 1kg)
- 100g caster sugar
- 50g dark brown sugar
- 100ml red wine vinegar
- 100ml malt vinegar
- 100ml red wine or port
- 1 finely chopped clove garlic or 1 tbsp garlic powder
Method:
- Finely slice the onions and place them in a pan with the sugar. Cover and cook for 10 minutes.
- Add the liquid and the garlic, then simmer until the liquid has reduced and the mixture is sticky. (This should take about 40 minutes).
- Leave to cool. Once cooled, transfer into sterilised jars.
